Made with a base of puréed fruit, these bowls are a lighter option for breakfast or lunch. What a delicious (and healthy) way to start the day!
Preparation Instructions:
Step 1
The day before service, thaw mango under refrigeration overnight.
Step 2
Place banana and orange juice in a blender. Purée until smooth. Place 3 lbs. of mango cubes and all the frozen strawberries in blender. Purée again until smooth. Alternatively, place in a large container, and use an immersion blender to purée.
Step 3
For service, use a #6 scoop to portion 2/3 cup into a 12 oz. serving bowl. Garnish with a #16 scoop (1/4 cup) of granola and #30 scoop (2 Tbsp.) thawed mango cubes.
